Builds the CreatePool DTO. Key order: token0Key, token1Key, fee, startingPrice | startingSqrtPrice, token0Symbol, token1Symbol, uniqueKey, name, isPrivate, privateAccess.
Prices are those of the canonical pair (token1 per token0); a price quoted the other way round
is inverted by the caller before it gets here.
